Cascara is a natural beverage made from the dried pulp of the coffee fruit (the part that is normally discarded in the production of the bean). It is neither coffee nor tea, but something in between, with a very fruity and delicate aromatic profile. Our cascara comes from Finca Guacovia (also known as Finca Guacanas), located at 1600–1900 meters above sea level, in the heights of San Adolfo, Acevedo, Huila, Colombia. This altitude, combined with the region's unique volcanic soils, rich in nutrients such as potassium, nitrogen, and boron, creates an ideal environment for growing high-quality coffee. The soil structure effectively retains moisture while ensuring good drainage, conditions particularly favorable for coffee plants.

The Finca el Puente Batian is a botanical variety originating from Kenya, distinguished by its extraordinary complexity in the cup. The Field Blend originates from the continuous research work carried out at Finca el Puente on African varieties grown in different plots. The goal is to understand which varieties express the best aromatic potential and how they can be combined to create unique flavor profiles. During the harvest, the team tastes the different varieties multiple times and experiments with different combinations. However, this blend was created almost by chance: after a cupping session, some beans from four varieties grown in the four areas of the plantation were left over. They were mixed and used for the afternoon coffee — and the result was surprising. The cup obtained exceeded all expectations. The next day, each variety was roasted separately to replicate and refine the profile. After several tests, the ideal ratios were defined to recreate that same exceptional cup. The definitive Field Blend combines SL28, Batian, Geisha, and Ethiopian varieties, sourced from the four areas of the farm where these plants grow. A blend born from innovation, curiosity, and a stroke of luck that turned out to be extraordinary.

True to the variety, this lot resembles the SL28 grown in Kenya, with intense purple notes of black currant and blackberry. At the same time, the terroir of Santa Bárbara and Finca La Salsa provides a richer, sweeter, and rounder cup, slightly less bright compared to the traditional Kenyan profile. A rare coffee, elegant and deeply representative of Benjamin Paz's talent.

In this new blend, we have decided to use coffee from just ONE producer and from just ONE country, Honduras. We decided to use just ONE botanical variety, Catuai from just ONE production region, one small piece of land. We decided to work with just ONE producer, Marisabel and Moises Caballero from Finca El Puente. The difference is that we are applying four different processing methods. In fact, our blend will consist of one washed coffee, one natural coffee, one semi-anaerobic and one anaerobic coffee. We chose this approach to show you how one country of origin has evolved in creating different taste profiles. Four different processes that will collectively create complexity, intensity, acidity, sweetness to create not just an espresso but a truly unique espresso. All of this serves to show the evolution of coffee worldwide but also the know how in each country of origin. Now in our possession, we can use this to help us describe the beautiful story of the espresso.
